Anchovies
"Anchovy" is the name of more than 100 species of the Engraulidae family. They are small, silvery fish that resemble miniature herrings. About 4 inches in length, anchovies are most abundant in subtropical and tropical waters. Crown Prince packs the European anchovy, Engraulis encrasicolus, which is the principle anchovy used for human food. It is harvested and packed in large quantities along the coast of Morocco. Traditionally, the body is salted and packed in barrels, maturing from 3-12 months in storage. This is the only product in the Crown Prince line that is not cooked, but cured. Anchovies should not smell when you open the jar. The fish should be firm when pulled and not fall apart. Anchovy fillets should be completely free of skin and the majority of their fine bones. Herring
Crown Prince Kipper Snacks are made from Atlantic Herring - Clupea harengus harengus, caught off the eastern coast of Canada. These herring dwell in the surface waters of the open ocean, traveling in huge schools. Crown Prince Kipper Snacks are made from a large whole herring that has been split, brined, air-dried, and smoked over hardwood. The herring are filleted and cleaned within hours of being landed on shore. Learn more

Salmon
Crown Prince Salmon is produced only from wild caught Pacific salmon. No farm raised salmon are used. The salmon are typically caught using large fishing boats equipped with a purse seine net and are transported to the cannery in refrigerated water. Usually seawater is used during transportation, but in the case of our no-salt-added product this is avoided and fresh water is used. After inspection and cleaning, the salmon are cut into cross sections and placed into empty cans. Nothing is added to the salmon. The liquid in the can is the natural liquid that cooks out of the fish. Learn more

Sardines
Most nutritionists consider sardines one of the healthiest foods available. They are caught in nets specifically designed for catching sardines. Great care is taken to minimize the length of time from the fish being caught to its delivery to the packer. The best flavored sardines come from the cold water oceans. Crown Prince packs two of these types of sardines. Our Skinless/Boneless, 15-ounce oval cans of sardines in tomato sauce and 4.25-ounce cans are true sardines, or Sardina pilchardus. Our Scottish 3.75-ounce sardines from the frigid North Sea are commonly called sprats, or Sprattus sprattus. Learn more

Tuna
Crown Prince packs albacore, tongol and yellowfin tuna. Albacore is the only tuna that can legally be sold in the United States as "white meat tuna." Tongol is a "light meat tuna." The meat is firm and compares well to albacore. Our Albacore and Tongol are packed in water, and our Yellowfin in pure Greek olive oil. Crown Prince uses no additives in our tuna. Both our Albacore and Tongol are available with or without added sea salt. We work closely with our packer to ensure the finest quality. Learn more
